VARIATIONS

There are easily more than three dozen varieties of fillings for ravioli. In addition to the classic ricotta above, try these fillings:

Garlic Chicken: Season cooked, minced chicken with salt, pepper, and garlic.

Basil Pesto: Just what it sounds like. Try our Pesto recipe.

Butternut Squash with Nutmeg: Puree cooked butternut squash and season with a little salt, pepper, and nutmeg.

THERE ARE A variety of tools available to facilitate making ravioli—ravioli cutters, ravioli rolling pins, ravioli makers. In the end, we still think the fork is the best way to go. (So did Pete’s grandmother, who tried every tool under the sun before returning to the tried-and-true fork method.)
